Roast strawberries for 15 minutes until softened and syrupy, stirring once halfway through.
Make the Mascarpone Cream: In a bowl, whisk mascarpone, cream, powdered sugar, and vanilla until smooth and fluffy. Chill until ready to serve.
Spoon roasted strawberries (with their syrup!) into serving bowls. Top with a generous dollop of mascarpone cream.
