Roasted Strawberries with Mascarpone Cream

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, toss strawberries with the Dark Chocolate Balsamic, honey, vanilla, and salt. Spread on a parchment-lined baking sheet in a single layer.
  3. Roast strawberries for 15 minutes until softened and syrupy, stirring once halfway through.
  4. Make the Mascarpone Cream: In a bowl, whisk mascarpone, cream, powdered sugar, and vanilla until smooth and fluffy. Chill until ready to serve.
  5. Spoon roasted strawberries (with their syrup!) into serving bowls. Top with a generous dollop of mascarpone cream.
  6. Optional garnish: shaved chocolate, fresh mint, or crushed nuts.
  7. Excellent over pound cake, waffles, or ice cream!
