Ingredients
For the Roasted Strawberries
1 lb fresh strawberries, hulled and halved
2 tbsp Dark Chocolate Balsamic Vinegar
1 tbsp honey or maple syrup
1/2 tsp vanilla extract
Pinch of sea salt
For the Mascarpone Cream
1/2 cup mascarpone cheese, room temperature
1/4 cup heavy whipping cream
1 tbsp powdered sugar
1/2 tsp vanilla extract
Instructions
Preheat oven to 375°F.
In a mixing bowl, toss strawberries with Dark Chocolate Balsamic, honey, vanilla, and a pinch of sea salt. Spread on a parchment-lined baking sheet in a single layer.
Roast for 15 minutes, stirring once halfway through, until strawberries are softened and syrupy.
Make the Mascarpone Cream: In a bowl, whisk together mascarpone, heavy cream, powdered sugar, and vanilla until smooth and fluffy. Chill until ready to serve.
Spoon roasted strawberries with their syrup into serving bowls. Top with a generous dollop of mascarpone cream.
Optional: Garnish with shaved chocolate, mint, or crushed nuts. Serve alone or over pound cake, waffles, or ice cream.
